Heritage wheats bring Old World taste and nutrition to the New World
Centuries-old heritage wheats have recently made a big comeback as a complement (or alternative) to traditional wheat flours. Along with their whole-grain nutrition, heritage wheats such as spelt and White Sonora offer a sweeter nutty flavor profile when compared to other grains. Baking with spelt results in a lighter end product than other whole wheats. White Sonora – best known for its use in tortillas – is a go-to soft, low-protein wheat used by artisan bakers in many baked goods as well as in brewed products.
